This is so tasty. It can accompany almost anything. And in my house, it often does :)
1 fennel bulb
1/2 red onion
8 cherry plum tomatoes
A handful of fresh, chopped coriander
Freshly squeezed juice of 1 lemon
2 tbspn olive oil
Finely slice the fennel, onion and tomatoes.
Mix together in a bowl.
Add the chopped coriander.
In a separate cup, mix together the olive oil and lemon juice.
Add the lemon and oil mixture to the sliced ingredients and stir together.
alllow to infuse for a short while.
I love the combo of fennel and tomato .. this salad is so cleansing .. thanks Emma!
