This sounds boring but is actually extremely tasty. I like to eat it, hot and slightly spicy, over a diced avocado.
1 onion, diced
1 garlic clove, crushed
1 red pepper, diced
2 x 400g cans red kidney beans (I use the Biona ones in chilli sauce)
125g mushrooms, quartered
1 x 400g can chopped tomatoes (I use Waitrose Organic with chopped herbs)
100g baby leaf spinach
2 tsp mixed herbs
1 tsp cajun spice
1/2 tsp chilli powder
250ml stock
Gently fry the onion, garlic and red pepper in a little olive oil.
Add all the remaining ingredients and simmer for 10 minutes.
